- Eight tablespoons extra virgin olive oil
- Set of four cruets.com swirl design olive oil dipping dishes
- One loaf of your favorite bread
- One small onion
- One rib celery
- One carrot
- One quarter cup fresh flat-leaf parsley leaves
- Salt to taste
- 8 oz bulk meat of any type
- 30 oz ounces Italian crushed tomatoes
- One teaspoon crushed red peppers
Chop the carrots, onions, and celery. In a large pan, mix the onion, celery, carrot, parsley, olive oil, and salt, and toss to coat with oil. Cook over moderate heat until the vegetables are soft for three minutes. Put in the meat, making sure to break it up into small bits with a spatula, and toss to blend. Reduce the heat to low, and cook until the meat changes color, for five minutes. If using whole canned tomatoes, place a food mill over the skillet and puree the tomatoes directly into it. Crushed tomatoes can be added directly from the can. Stir to blend, and, if using, add the crushed red peppers. Cover, and cook until the sauce begins to thicken, about 20 minutes. Taste for seasoning. The sauce can be refrigerated, covered, for up to three days or frozen for up to one month.
